Sour Cream Cucumber Salad

Place the cucumber slices in a container sprinkle liberally with salt and cover with cold water.

Refrigerate 4 hours to overnight.

Then take paper towels and blot moisture from cucumbers.

Combine onions and cucumbers

Whisk the sour cream, garlic, vinegar, sugar, and salt in a mixing bowl until the sugar has dissolved.

Make your own Italian Salad Dressing

Whisk together all the ingredients in a salad shaker, or a mason jar Leftover dressing can be stored in the refrigerator for up to 10 days.

The Best Way To Cook Your Freshly Caught Fish

A freshly caught fish can be cooked in a thousand and one ways. Any fisherman worth his salt has his own unique way of cooking a freshly caught trout, salmon or whatever fish he caught. So fisherman all across the country has been handed down methods of cooking fish. Here are some tips to get the best out of your fish.

1.Frying

Breading and frying a freshly caught fish is as good as it gets. The smell of butter emanating from the frying pan and the flair a fisherman puts in flipping his catch is worth its weight in gold, almost. For the novice fisherman, make sure that the butter is extra hot but not yet burning. Also, make sure that the fish is well coated in batter. Season your batter to your heart's content, salt and pepper never goes wrong. You may want to try other herbs and spices with the batter for a more delicious fish.

2.Grilling

At first glance, grilling would seem to be the easiest way to handle your fish. A newbie might assume that grilling fish is the same as grilling steaks or burgers. Unlike fowl or cattle, fish tends to secret most of its own juices when cooked. On a grill the delicious juice drips into the coals.

To prevent losing the moisture, first coat the fish with oil. The oil will seal a part of the moisture inside. Second, keep an eye on the fillets and turn them as soon as a cut would reveal that the fresh fish is cooked halfway through. After being flipped, watch the fish carefully. Remove the fish as soon as it is cooked through.

An option to basting the fish with oil is to wrap it in aluminum foil. The aluminum foil will keep the moisture and marinate the fish in its own moisture. Placing herbs and spices inside the foil with the fish enhances the grilling process and the fish itself.

3.Baking

Baking is the best option for the fisherman who does not want to watch over the fish during cooking. The fisherman can prepare the marinade and pre-heat the oven, then pop the fish into the oven for a predetermined amount of time. You may want to check on the fish from the time to time, ensuring that you don't overcook the fish.

Whatever fish you caught, a good recipe and proper cooking will for sure enhance the catch. Take time to prepare for cooking, a badly cooked fish will no doubt spoil your day. Remember the first rule of cooking, don't overcook your fish.

Herb-crusted Russet Potatoes

Scrub potatoes clean.

Preheat oven to 425°.

Place potatoes in a baking dish and pour melted nutter over them, toss to coat.

Roast for 35 minutes or until potatoes are tender and golden brown.

Sprinkle with herb of your choice, toss to coat.

Bake for another 10 minutes.

Test with a fork to make sure it glides through.

Season with salt and pepper.

Wiener Schnitzel

Trim all fat from veal.

Beat or pound the veal cutlets until very thin.

Lightly salt and pepper the veal cutlets.

Set up 3 shallow dishes.

Place the flour and 1/2 teaspoon salt in one and breadcrumbs in another.

Beat eggs well and place in the third dish.

Dip first into a small bowl containing flour,

Dip next into a small bow of beaten egg

Dip next into bowl containing dried bread crumbs

Heat the butter, oil or lard in a large frying pan. (or the combination)

Schnitzel is done when a fork goes right through the meat.

Serve topped with quarters of lemon, roasted potatoes, rice and salad as a side dish

Sprinkle the lemon zest on the top of the schnitzels

Juice is squeezed on the cutlet according to taste

When mealtime arrives, simply warm up the lasagna and prepare a quick salad. You have a well-rounded meal packed with nutrients. Use whole grain lasagna noodles for more fiber.
#3 Rice cooker meals - Did you know you can steam rice, chicken and cut-up vegetables all at the same time? It’s true. Use your rice cooker to make a tasty meal. In fact, there’s an entire cookbook written by Roger Ebert of movie critic fame on how to make meals in your rice cooker.
#4 Use your crock pot - You can cook a chicken in your crock pot. You can also use it to make casseroles, stews and all sorts of tasty meals. If you’re pressed for time in the morning, then prepare everything the night before. Add the items to the crock pot in the morning and set it to cook while you’re away at work. When you come home, your dinner is ready and waiting for you and your family to enjoy.
#5 Burgers - When you buy the ground beef, turkey or even buffalo at your store, take it home and press it into patties. Freeze the patties. When it’s time for dinner, all you have to do is pop the frozen patties on the grill. They cook about 5-7 minutes a side depending on how well you like them to be cooked. While the burgers are cooking you can make a veggie side dish like Brussels sprouts, cole slaw or just a nice mixed greens salad. Dinner in less than ten minutes. Serve the burgers on whole grain buns for more fiber.
#6 Tacos - Most kids love tacos and you can make them pretty darn quickly. You can also get the family in on the preparation. Children can grate the cheese. Or you can buy it pre-shredded. Reheat beans in the microwave. Brown the hamburger or turkey burger on the stove. Chop a few veggies and you’re ready to go.
#7 Fish - You might be surprised how quickly fish cooks. In fact, most fish fillets take just a few minutes to be cooked through. Tilapia is a child-friendly fish. Serve fillets with lemon, tartar sauce or bread them. Add a side of sautéed or steamed green beans and a quick salad and you have a very healthy meal. Note: You can make your salads at home or buy those quick and easy bag salads.
Plan your meals for the week and shop according to your list. Try to incorporate a few make-ahead items. Use your crock pot and rice steamers to make meals while you’re busy doing other things.
