A substitution for eggs.
Need an egg for a recipe but you’re all out
? You can substitute two tablespoons of real mayonnaise for a large egg in any recipe. Be sure not to use whipped salad dressing though unless you want the extra salt that it contains.

Hungarian Rice With Pork or Beef

Heat oil in a large pot and sauté the onion until translucent, for about 3 minutes.

Add the red, green pepper and continue to sauté for two more minutes.

Add tomatoes, paprika, and the meat to the pot, stir for few seconds.

Add half the broth brings to a boil. Reduce heat, cover and cook for 30 minutes more.

Then add the salt and pepper to taste.

Add rice, remaining broth and water. Bring to a boil. Cover and continue cooking over very low heat for 30 to 35 minutes or until pork and rice be tender, when it starts to slightly thicken, it’s done.

Chicken Soup with Tiny Meatballs

Place chicken in water in large saucepan. Add salt, pepper, basil, bay leaf and garlic. Bring to boil. Lower heat and simmer slowly for 1/2 hour or until chicken is tender. Remove chicken from pan. Cool and carefully skim fat from surface of soup. Bring soup to a boil and add onions, carrots, parsnip and celery, simmer gently for 10 minutes.

Mix beef with egg, bread, salt and pepper. Form into small meatballs, add meatballs to soup and simmer for 35 minutes. Meanwhile, skim and bone the chicken. Cut meat into small pieces. Garnish the soup with parsley and celery and serve.

Get the right temperature for deep frying.  Does your oil always seem to be the wrong temperature? A simple way to find out if your oil is hot enough is to use a bread cube.  If the bread browns in a minute, the oil is between 350 and 365 degrees, 40 seconds – 365 and 382 degrees, 20 seconds – 382 and 390 degrees. Or, if you have one, you can use a thermometer. Just be sure that it is a metal thermometer designed for deep fryers.

Peanut Chicken Snacks

Preheat oven to 350 degrees. Place chicken breasts in a shallow baking dish just large enough to hold them. Pour half and half over them and bake for 30 minutes. Let cool and cut in 1 inch cubes.

Process mayonnaise, chutney, sherry, vinegar, curry powder and turmeric in a blender or food processor. Dip chicken pieces into the curry mayonnaise and roll in the chopped nuts. Refrigerate 30 minutes. Arrange on a serving plate with fancy toothpicks.

Make sure the oil is hot before frying foods.
Although they’re not the healthiest option, fried foods sure do taste good. The key to perfect frying is to get the oil hot before you put the food in. (Not so hot that it is smoking though – be careful!) If you don’t get the oil hot, your food will absorb too much oil and taste greasy. To test whether the oil is hot enough for frying, throw in a drop of water or even a small piece of what you’re cooking. If it bubbles rapidly then you know it’s ready.

Hungarian Fried Bread with Cabbage

Heat water and butter to rapid boil in 2quart saucepan.

Remove from the heat, and stir in the milk and one pouch potatoes with the seasoning just until well blended.

Let stand about one minute or until the liquid absorbed.

Whip vigorously with a spoon until smooth.

Place the mashed potato, real bacon beats, cabbage, yeast, sugar, 2 cups flour in a mixing bowl. Mixed truly until well moistened, or until smooth and elastic.

Transfer to a battered bowl, cover and let rise until doubled.

Separate dough into 6 portions, shape into a round and place on a floured board. Cover and let rest 20 minutes.

In a large skillet, heat 1 inch vegetable oil to 350 degrees.

Stretch the dough to about an 8-inch diameter. Make a slit in the center. This helps to keep the dough from puffing up in the middle and help the dough to frying properly.

Frying time about 2 minutes per side or until golden brown.

Drain on paper towels.

Serve hot rubbed with garlic clove and sprinkled with salt, if desired. Topping with sour cream or cheese is optional.

Hungarian Sour Cherry-Cream Pie

Heat oven to 375 degrees. Butter a 10x6-inch rectangular tart pan, or a 9-inch square or a 9-inch round cake pan and dust with bread crumbs.

In a large bowl, cream butter and half the granulated sugar until light and fluffy. Add egg yolks and continue creaming until well incorporated. Add the flour and salt, mixing well.

With clean, grease-free beaters, whip egg whites with remaining granulated sugar until stiff. Gently fold whites into cake batter.

Transfer batter to prepared pan.

Sprinkle puppy seed on the top add the cherries, almond and the wall nuts.

Bake 30 minutes. The batter will partially bubble up and cover the fruit. Cool in pan

Sprinkle with powder sugar. Cut into squares or wedges and serve.

Sour Cream Cucumber Salad

Place the cucumber slices in a container sprinkle liberally with salt and cover with cold water.

The Best Way To Cook Your Freshly Caught Fish

A freshly caught fish can be cooked in a thousand and one ways. Any fisherman worth his salt has his own unique way of cooking a freshly caught trout, salmon or whatever fish he caught. So fisherman all across the country has been handed down methods of cooking fish. Here are some tips to get the best out of your fish.

1.Frying

Breading and frying a freshly caught fish is as good as it gets. The smell of butter emanating from the frying pan and the flair a fisherman puts in flipping his catch is worth its weight in gold, almost. For the novice fisherman, make sure that the butter is extra hot but not yet burning. Also, make sure that the fish is well coated in batter. Season your batter to your heart's content, salt and pepper never goes wrong. You may want to try other herbs and spices with the batter for a more delicious fish.

2.Grilling

At first glance, grilling would seem to be the easiest way to handle your fish. A newbie might assume that grilling fish is the same as grilling steaks or burgers. Unlike fowl or cattle, fish tends to secret most of its own juices when cooked. On a grill the delicious juice drips into the coals.

To prevent losing the moisture, first coat the fish with oil. The oil will seal a part of the moisture inside. Second, keep an eye on the fillets and turn them as soon as a cut would reveal that the fresh fish is cooked halfway through. After being flipped, watch the fish carefully. Remove the fish as soon as it is cooked through.

An option to basting the fish with oil is to wrap it in aluminum foil. The aluminum foil will keep the moisture and marinate the fish in its own moisture. Placing herbs and spices inside the foil with the fish enhances the grilling process and the fish itself.

3.Baking

Baking is the best option for the fisherman who does not want to watch over the fish during cooking. The fisherman can prepare the marinade and pre-heat the oven, then pop the fish into the oven for a predetermined amount of time. You may want to check on the fish from the time to time, ensuring that you don't overcook the fish.

Whatever fish you caught, a good recipe and proper cooking will for sure enhance the catch. Take time to prepare for cooking, a badly cooked fish will no doubt spoil your day. Remember the first rule of cooking, don't overcook your fish.

Wiener Schnitzel

Trim all fat from veal.

Beat or pound the veal cutlets until very thin.

Lightly salt and pepper the veal cutlets.

Set up 3 shallow dishes.

Place the flour and 1/2 teaspoon salt in one and breadcrumbs in another.

Beat eggs well and place in the third dish.

Dip first into a small bowl containing flour,

Heat the butter, oil or lard in a large frying pan. (or the combination)

Schnitzel is done when a fork goes right through the meat.

#4 Use your crock pot - You can cook a chicken in your crock pot. You can also use it to make casseroles, stews and all sorts of tasty meals.
